     No 1. Pasta to Frittata DIFFICULTY:

    Leftover pasta forms the main ingredient for a brilliant frittata.
    The story of the frittata, however, starts way back during the Roman Empire – I mean, what could be simpler than mixing vegetables or leftover cooked meats into eggs, scrambled, for dinner? Talk about fast foods and pre-prepared meals!
    Gosh, this is like, “Throw it all in a pan, add eggs, stir and eat!” Anyway, the frittata was the omelette’s big mamma. The Romans used the egg to add depth and sustenance to the vegetables. I love to use our leftover pasta on a Sunday morning…Read the method online ]


     No 2. Cold Meats and Grilled Vegetables to Pizza DIFFICULTY:

    All I can say, is, “Pizza. Pizza. Pizza!” Chop it all up and set aside. Then make the easiest pizza dough ever – Italian pizza dough recipe

  • 1T castor sugar
  • 2t dried yeast
  • 215ml lukewarm water
  • 450g plain flour
  • ½t salt
  • 3T olive oil

    Of my fondest memories are ones involving sandwiches! Is there anything better? I slice leftover leg of lamb thinly. But first, get hold of some great bread. Even better, if you have the time, bake one. Here’s how to create another easy masterpiece –

    Ingredients
  • 6 cups Nutty Wheat flour
  • 10ml instant yeast
  • 1 tablespoon salt
  • 2¾ cups warm water
  • 2 tablespoons oil
  • 1 tablespoon dark brown sugar

     No 4 - 6. Chicken, Stews and Veggies
    # 4. Roast chicken or chicken curry
    Shred the chicken off the bones. Make a salad using thinly sliced pineapple, chopped celery, mango cut into chunks and mayo. Add the chicken to this, and you have a great meal!

    # 5. Stews
    First things first – always keep frozen puff pastry in your freezer. It works just fine, and will come in handy. I use leftover stews to make wonderful pies. What can be nicer than a lamb and vegetable pie? Pop it into a dish, and cover it with the puff pastry (that you have defrosted), brush with beaten egg yolks and pop into a pre-heated oven of 180°C. Bake until the pastry goes brown.

    # 6. Veggies
    Different vegetables are great ingredients for a soup. Almost anything goes. Keep a few marrow bones in the freezer to add to your concoction.

     No 7 - 10. Bread, Potatoes and Fruit
    # 7. Stale bread
    No, you don’t have to throw it away! Beat an egg in a little milk, dip the slices into the egg mixture, and fry in a little oil until brown on either side. Drizzle with maple syrup, add a rasher or two of bacon, and you have a Sunday morning French toast breakfast
    ready to go!

    # 8. Mashed potatoes

    Use cold mash as a binder for fish cakes. Add flaked fish, chopped parsley, salt and pepper, dip in beaten egg and then in crumbs. Fry in a little oil until brown.

    # 9. Mince Cottage Pie

    Add a few shredded carrots and peas, make sure there’s enough gravy, top with mash and a few small blobs of butter. Pop in oven and bake until brown on top. Invite a couple of friends…

    # 10. Fruit, yoghurt, seeds and juice
    What can be easier after a ‘heavy’ Friday evening? Wash the fruit, cut it up, and throw everything into the blender to make a smoothie. I like using sunflower seeds, linseeds and sesame seeds – and they’re healthy too!
